Shibazuke are traditional pickles made with eggplant and red shiso. They have a refreshing taste with the touch of sourness that naturally develops during lactic acid fermentation. Usually it takes at least a week to make them from scratch, but if you have Kosyo’s Shibazuke Pickle Mix, you can make exquisite shibazuke overnight. The steps are very simple—coat seasonal vegetables with the mix and refrigerate them for half a day. This results in lightly seasoned, crisp vegetables with a touch of fruity ume plum sourness. You can eat them like an oil-free salad! Also, since the mix does not have the typical pink shibazuke color, you can retain the vegetable’s original color. Make colorful pickles or salads with colorful vegetables. Or if you garnish your shibazuke over grilled chicken or mix them in with boiled seafood, you’ll have a wonderful main dish. Shibazuke Pickle Mix comes in 5 individual packets of 20g (0.7 oz), each of which can accommodate 500g (18 oz) vegetables.

Cut vegetables into bite-sized pieces, put them into a plastic storage bag, add Shibazuke Pickle Mix, and shake to coat everything. Remove excess air from the bag, tightly seal it, and refrigerate it for half a day. Then you have shibazuke pickles! The mix reproduces the refreshing umami with a touch of sourness unique to authentic shibazuke, which usually takes one week to make. Vegetables that are ideal for shibazuke include cucumber, eggplant, daikon radish, onions, cabbage, and turnip. You can enjoy your shibazuke as a salad, but you can also make a wonderful main dish by garnishing them on grilled chicken or mixing them in with boiled seafood. If you add shiso leaves, ginger, or yuzu citrus peel, you can elevate the flavor even more. If you’d like to try traditional Kyoto-style senmaizuke pickles, put thinly sliced turnip (18oz), kombu kelp (4” x 4”), sugar (2 tbsp), rice vinegar (2 tbsp), water (1 cup), and Shibazuke Pickle Mix (1 packet) into a plastic storage bag and refrigerate it for half a day.
