Mizuame is a traditional Japanese sweetener made of starch. Literally meaning “water candy”, mizuame appears as clear as water and tastes as sweet as candy with a thick and syrupy consistency. It boasts a gentle sweetness and a smooth yet sticky texture like honey, which makes it perfect for glazing, mixing into drinks, and cooking desserts—in Japan, because of these qualities, it’s been used for centuries to sweeten wagashi (traditional Japanese confectionery). Since Maeda’s Mizuame comes conveniently bottled, it can be easily used in a variety of dishes from diverse cuisines, both sweet and savory. It dissolves easily, so you can add it to your favorite drinks, both cold and hot, like tea, coffee, lemonade, and cocktails.
You can enjoy Mizuame as-is—spread a spoonful on senbei (Japanese wheat crackers) or pour it over pancakes. It’s also a great substitute for regular sweeteners. Its gentle sweetness, smooth and syrupy texture, and clear color make it ideal for a variety of dishes. It can easily add a nice glaze to sautéed, grilled, or stir-fried dishes while it brings a luster to simmered dishes.
