Umesu is a byproduct of making umeboshi, salt-cured “ume” plum, which has been enjoyed in Japan for centuries. The plum extract from the curing stone fruit tastes tangy and salty. Fukami’s Organic Umesu’s only two ingredients are the organic Nanko ume plums grown by the Fukami Family, the fourth-generation farm in Wakayama Prefecture, and sea salt. The golden colored liquid is a pure extract from ume plums and is obtained after a 6-months long filtration process with no water added; because of this, it concentrates the umami and the nutritional components that include calcium, magnesium, citric acid, malic acid, and polyphenols. Although labeled as a vinegar, it technically isn’t one as it contains no acetic acid. Traditionally, umesu has been utilized as a natural remedy and also a substitute for soy sauce, salt, or vinegar. It's an incredibly versatile condiment that lends a unique complexity to savory dishes. Use it to make dressings, splash it on steamed or stir-fried vegetables, or add a dash to soups or braises. This umesu is salty, sour, and fruity, and can be a great substitute for soy sauce, salt, and even balsamic vinegar. Its fruitiness helps complement any foods’ umami, and its crisp acidity neutralizes odors when poured over grilled fish. Use it to make dressings or add a dash in soups or braises for a refreshing kick. It can also produce shiny fluffy rice if added just before cooking. Note that due to its strong, concentrated flavors, we don’t recommend drinking it straight.
