Made with premier soybeans organically grown in the area, Marui Shoyu’s Soy Sauce Moromi embodies the flavors of the mountainous region—some of the notable examples include Togakushi soba buckwheat noodles, Nozawana greens, and apples. The umami-rich condiment is neither a sauce nor a paste, but it can be described as chunks of soft soybeans in savory syrup. It’s best enjoyed with rice, but it can easily elevate lightly flavored ingredients like tofu and vegetables. You can also pair it with equally robust cheese or simply enjoy it as-is on the side of sake or wine.
This umami-rich “edible soy sauce” can accompany a wide variety of dishes, but the most traditional way to enjoy it is to put it on top of freshly cooked rice. The robust sweet and savory condiment and piping hot rice melt in your mouth in wonderful harmony. Naturally, it is great on TKG (raw egg over cooked rice). It also elevates lightly flavored dishes, such as cold tofu, shredded nagaimo (Japanese mountain yam known for its slimy, gooey texture), grated daikon radish, fresh cucumber, and simmered vegetables. Also, you can put a tiny portion of the condiment on porridge or add it to salad dressings. Because it pairs with equally robust flavors as well, you can serve it on the side with cheese plates or charcuterie. Or you can simply enjoy it as-is along with sake or wine.
